| BAKING VS COOKING
Although many recipes in this book use the oven, not many can really be called baking recipes. Baking involves yeast, pastries and lots of flour floating like pollen in the air. Baking requires a tall hat with a puffy crown.
If there are few baking recipes here it is because of the baking union's requirement of an exactness of which I personally am incapable. Even a slight variation in a baking recipe results in a product that is likely to look as though it has been pulled from a kiln rather than an oven.
A cooking recipe, in most cases, can be adjusted, substituted and flipped upside down - the result will still be palatable. The difference is a function of the fact that baking is a chemistry experiment and cooking is an artistic endeavor.
